Harley's Garlic Scape Pesto




6 garlic scapes, chopped (don’t use the woody, tough ends)

¼ c pine nuts or walnuts (if you use walnuts, toast first so they are less bitter)

1 c freshly grated hard cheese like Parmesan, Asiago, etc. (I like to use a ½ c of each)

¾ c extra-virgin olive oil

1 T fresh lemon juice

Salt and pepper to taste



Place the garlic scapes, cheese lemon juice, and nuts in a food processor. Drizzle the olive oil over the mixture. Blend until pesto is bright green and smooth. Season with salt and pepper.

Use any way you’d use basil pesto. Great on grilled chicken breasts or tossed with hot pasta.

Hmmm. I'm going to have to try this. Normally I don't cut off the scapes on my garlic. I let them go, and they make tiny garlic bulblets, which I plant instead of the cloves. Pikkles Plus
