Broccoli Raab and Sausage
1 bunch broccoli rabe (cut in 2” with tender stems)
3 to 6 italian sausage links (sweet or hot cut into ¾” thick or remove casing)
4 tbsp oil
2 cloves of garlic (minced)
salt & pepper
red pepper flakes and grated parmesan cheese (optional)
- Boil broccoli rabe in salted water till cook but not mushy. Drain well.
- Sautee garlic in oil. Add the sausage and fry. Season with red pepper flakes if using.
- Add the broccoli rabe with the sausage and stir until coated with oil. Season with salt and pepper.
Serve as is or mix with cooked pasta and some pasta water, topped with grated parmesan cheese.
